Couscous is a versatile dish that can be transformed with different flavors and ingredients. This Greek-style couscous recipe combines fresh herbs, vegetables, and a hint of lemon to create a delightful side dish that can accompany a variety of meals. Perfect for gatherings, this recipe is easy to follow and promises an explosion of flavors on your plate.

Ingredients

To prepare Greek-style couscous, you will need the following ingredients:

  • 1 cup couscous
  • 1 1/4 cups vegetable broth (or water)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • Juice of 1 lemon

Instructions

Step 1: Prepare the Couscous

Begin by boiling the vegetable broth in a saucepan. Once it reaches a rolling boil, remove it from heat and stir in the couscous, olive oil, salt, and black pepper. Cover the saucepan with a lid and let it sit for about 5 minutes, allowing the couscous to absorb the liquid.

Step 2: Fluff the Couscous

After 5 minutes, remove the lid and use a fork to fluff the couscous gently. This helps to separate the grains and prevents clumping. Set it aside to cool.

Step 3: Prepare the Vegetables

While the couscous is cooling, chop the cherry tomatoes, cucumber, and red onion. Place them into a large mixing bowl, along with the feta cheese, parsley, and mint.

Step 4: Combine Ingredients

Once the couscous has cooled to room temperature, add it to the bowl with the vegetables. Squeeze the juice of one lemon over the mixture and toss everything together gently. Ensure all ingredients are evenly distributed for a balanced flavor.
