Sautéing vegetables is a fantastic way to preserve their nutrients while enhancing their flavor. This method of cooking allows you to create a vibrant and tasty side dish or a main course that’s packed with vitamins and minerals. In this article, we’ll explore a simple yet delightful recipe for sautéed vegetables that you can easily prepare at home.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, sliced (any color)
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat the Oil: In a large skillet over medium heat, add the olive oil. Allow it to heat up for a minute.
  2. Sauté the Onions: Add the sliced onion to the skillet. Sauté for about 2-3 minutes until the onion becomes translucent.
  3. Add Garlic: Stir in the minced garlic and sauté for another minute until fragrant. Be careful not to burn the garlic.
  4. Incorporate Bell Pepper: Add the sliced bell pepper to the skillet and cook for an additional 3-4 minutes, stirring occasionally.
  5. Add Remaining Vegetables: Toss in the zucchini and broccoli florets. Continue to sauté for another 5 minutes until the vegetables are tender but still crisp.
  6. Add Tomatoes: Finally, add the cherry tomatoes and cook for 1-2 minutes until they soften slightly.
  7. Season: Season with salt, pepper, and dried oregano. Stir well to combine all the flavors.
  8. Serve: Remove from heat, garnish with fresh basil or parsley if desired, and serve immediately.

Tips for Perfectly Sautéed Vegetables

  • Cut vegetables into uniform sizes to ensure even cooking.
  • Don’t overcrowd the skillet; cook in batches if necessary to avoid steaming.
  • Experiment with your favorite vegetables or add some protein, like chicken or tofu, for a complete meal.
